Escaramujo Wines: Pioneers in Marine Symbiosis and Sustainable Aquaculture

At Escaramujo Wines, we not only produce exceptional wines with underwater aging, but we also promote an innovative environmental solution that radically transforms marine aquaculture.

Before our intervention, barnacles, tiny marine organisms, posed a serious threat to aquaculture. They adhered to the shells of bivalves such as scallops and oysters, deforming them, slowing their growth, and ultimately causing their death, generating significant losses for aquaculturists.

However, thanks to our pioneering research, we discovered a fascinating symbiosis: by placing our wine bottles in the same pots where these bivalves grow, the barnacles prefer to adhere to the smooth glass surface of our bottles rather than the bivalves' rough surfaces.

This simple yet ingenious discovery has turned our wine bottles into a powerful environmental sustainability tool, significantly helping to reduce mortality in aquaculture caused by barnacles. Thus, Escaramujo Wines is proud to be the only underwater winery in Spain that, through underwater aging, actively contributes to preserving and improving the health of the marine ecosystem.

Biodiversity and Recovery of
Endangered Species

In addition to this contribution, the proliferation of barnacles on our bottles creates an environment conducive to the spontaneous recruitment and growth of a multitude of bivalves and other marine animals. They arrive naturally, attracted by the chemical signals of the organisms already established in our boxes, and grow without the need for human manipulation.

In just one of our wine storage boxes, we have counted more than 100 new bivalves that grow completely naturally. Oysters, scallops, sea stars, fire clams, orange coral, white false coral, and other species find a safe haven in our boxes to develop during the months of aging of our wines.

But one of our most exciting achievements is the discovery of the spontaneous growth of a species listed as internationally endangered, the Pinna nobilis. We are proud to know that our boxes are being naturally selected for nesting and growth by this species. To support their recovery, we carefully transferred these species to new storage boxes, thus collaborating with the IUCN for their conservation and reintroduction into the Mediterranean marine environment.

Blue Decarbonization

The thousands of barnacles that decorate our bottles and the growing marine biodiversity around our winery act as natural decarbonizers of the marine environment. These organisms filter the CO₂ present in the water and convert it into calcium carbonate to form their exoskeletons. This process not only helps clean and purify the water from environmental pollution, but also further enhances the proliferation of marine biodiversity in our wine cases.

Sustainability

At Escaramujo Wines, we are fully aware of the importance of caring for the environment, ensuring that every step of our production process is sustainable and respectful of the marine environment, which provides so much to us.

Our winery does not introduce materials foreign to the marine environment, but rather leverages existing aquaculture tools. Furthermore, we do not disturb the seabed, as all our production is carried out using underwater flotation. We also do not use chemicals that could pollute the environment.

Finally, we rely on native fauna for the biological sanitization of our bottles in the final stage of the process, thus completing a perfect circular economy cycle in direct collaboration with marine life.

Blue Tourism

We have traditionally observed the sea from land, but our Underwater Winery project offers a unique perspective: contemplating the land from the sea and understanding the importance of the sea from the sea itself. Visits to our underwater winery generate a new perspective, enriching the local tourism offering and collaborating with numerous companies in the local and international nautical and maritime sector. In this way, Escaramujo Wines actively contributes to the development of leisure and awareness-raising activities, as well as to strengthening the blue economy.
